Dark and Stormy
Baby, it maybe cooling off outside, but it’s all dark and story inside. If you’ve been a fan of this blog for a while then you know that if there is one liquor I enjoy, it’s rum. And while rum is mostly associated with summer cocktails like mojitos and rum punch, there is another awesome cocktail that’s perfect for this time of the year, a dark and stormy.
DARK AND STORMY RECIPE
2 oz. Lemon Ginger Brew*
2 oz. dark rum
Lime wedge and candied ginger, for serving
Combine Lemon Ginger Brew and rum in a highball glass filled with ice, then top off with club soda. Garnish with lime wedge and candied ginger.
LEMON GINGER BREW RECIPE
8 oz. ginger, peeled, chopped
½ cup fresh lemon juice
⅓ cup agave syrup (nectar) or pure maple syrup
Pulse ginger in a food processor to a coarse paste (or finely grate). Bring ginger and 6 cups water to a boil in a medium saucepan; reduce heat and simmer until reduced to 3 cups, 30–40 minutes.
Strain into a large jar and mix in lemon juice and agave; add more lemon juice or agave, if desired. Let cool; cover and chill.
Do Ahead: Brew can be made 2 weeks ahead. Keep chilled.
